Watermelon Ginger Salad


Serves 4 / This unique dish is best eaten within an hour of preparation.

4 cups bite-size watermelon chunks
1/4 cup finely diced crystallized ginger
1/4 cup fresh lime juice
Pinch of sea salt
1/4 cup minced fresh parsley

1. Place watermelon in a serving bowl. Toss ginger into melon, but do not stir. Dissolve sea salt into lime juice. Pour mixture over melon. Add minced parsley. Toss everything gently.


PER SERVING: 81 cal, 3% fat cal, 0g fat, 0g sat fat, 0mg chol, 1g protein, 21g carb, 1g fiber, 9mg sodium
