Roasted Butternut Squash with Goji Berries


Serves 6-8 / This simple side dish, loaded with antioxidants, features chewy, sweet goji berries and carotenoid-rich squash. If you need to reheat, add a little soy milk to moisten. Serving tip: Accompany with braised kale and grilled salmon for a colorful, healthy meal.

1 butternut squash (1 1/2 to 2 pounds)
1/2 cup dried goji berries
3 tablespoons pure maple syrup
1/2 cup chopped walnuts
1 1/2 teaspoons ground cinnamon
Salt

1. Preheat oven to 400°. Cut squash in half lengthwise and scoop out seeds. Place halves in a large baking dish, cut side up; add 1/4 inch of water to pan and cover with foil. Place in oven and bake for 45-50 minutes, or until tender. Remove from oven.

2. Using oven mitts to hold squash, scoop out pulp, transfer to a medium bowl, and mash. Stir in goji berries, maple syrup, walnuts, cinnamon, and salt to taste. Serve immediately.
