Lemon-Garlic Salmon with Peach-Avocado Salsa


Serves 4 / This tasty dish is full of potassium, omega-3 fatty acids, and vitamin C, all of which can help lower blood pressure.

1-2 tablespoons olive oil
2 teaspoons minced garlic
2 teaspoons fresh lemon juice
1 pound Alaskan salmon fillets
Salt and pepper
2 tablespoons chopped fresh parsley
Lemon wedges

Peach-Avocado Salsa:
1 peach, peeled, pitted, and chopped
1 avocado, pitted and chopped
1 papaya, seeded and chopped
1 jalapeño pepper, seeded and minced
1 tablespoon minced red onion
1 tablespoon chopped fresh cilantro
2 tablespoons lime juice

1. Combine all salsa ingredients and set aside.

2. Heat oil in a large skillet over medium heat. Stir in garlic. Drizzle lemon juice over fillets and dust with salt and pepper. Cook fillets for 10 minutes per inch of thickness, measured at thickest part, or until fish flakes when tested with a fork (turn halfway through cooking to brown on both sides).

3. Sprinkle with parsley and serve with lemon and salsa.
