Chamomile Chicken Soup

Chamomile Chicken Soup What is more comforting to serve someone who isn’t feeling well than chicken soup or chamomile tea? So why not both?

Prep Time: 30 minutes
Cooking Time: 3 hours

1 Whole skinless chicken
7  1/2 quarts water
12 Chamomile tea bags
4 cups chopped cauliflower (approximately 2 small heads)
4 cups chopped celery (7 to 8 stalks)
2 large yellow onions, chopped
4 cups chopped carrots (7 to 8 carrots)
1 cup rice (white or brown)

Place the chicken and water in a large stockpot. Boil until cooked through (about 50 minutes). Remove the chicken and set aside to cool. When cool, remove the chicken meat from the bone. Cut into bite-sized pieces. Add the tea bags to the broth, bring to a boil for 7 minutes, and then remove and discard the bags. Add the chicken, cauliflower, celery, onions, carrots, and rice to the pot. Add salt and pepper to taste. Simmer on low heat for approximately 2 hours.
