Chipotle Burgers with Avocado Aioli


Serves 4 / Studded with smoky, spicy chipotle peppers, this is no ordinary burger. Ingredient tip: You'll find chipotle peppers in adobo sauce in the Mexican-food aisle; this recipe uses the sauce and peppers separately. Serving tip: Serve on a bed of mixed greens.

2 tablespoons low-fat mayonnaise
½ small avocado, cubed
½ teaspoon chopped garlic
4 tablespoons canned adobo sauce, divided
2-3 medium canned chipotle peppers, seeded and minced
1 pound 95 percent-lean ground beef
¼ cup minced yellow onion
½ teaspoon salt
½ teaspoon black pepper
Thinly sliced tomato and red onion, for garnish

  1. Preheat grill or broiler. In a blender, combine mayonnaise, avocado, garlic, and 1 tablespoon adobo sauce. Process until smooth.
  2. In a medium bowl, combine remaining 3 tablespoons adobo sauce, minced chipotles, ground beef, onion, salt, and pepper. Mix with hands until combined well. Form into four patties and grill or broil 5-6 inches from heat, 5-7 minutes per side, turning once. Serve, topped with aioli, sliced tomato, and red onion slices.
