Medley BreakfastSeptember, 2005 Makes about 5 1/2 cups / This granola-style cereal is packed with flash-fighting powerhouses to jump-start your day. Fresh fruit provides additional phytonutrients. Granola 3 1/2 cups rolled oats 1 cup toasted wheat germ 1/2 cup raw sesame seeds 1/2 cup raw hulled sunflower seeds 1/3 cup canola oil 1/4 cup honey 1 teaspoon vanilla extract 1 tablespoon ground flaxseed 6 ounces nonfat plain or vanilla yogurt (or a mixture), or vanilla soy milk Fresh strawberries or blueberries (optional) Honey, to taste (optional) 1. In a large bowl, mix together oats, wheat germ, sesame seeds, and sunflower seeds. Add oil, honey, and vanilla extract; mix well. Spread on a rimmed baking sheet lightly coated with cooking spray. Cook at 275° for 1 hour, stirring every 15 minutes. When mixture is cool, crumble and store in an airtight container. 2. To serve, mix 1/2 cup granola with ground flaxseed and yogurt or soy milk. Top with fruit and sweeten with honey, if desired. PER SERVING: 427 cal, 41% fat cal, 20g fat, 2g sat fat, 4mg chol, 18g protein, 47g carb, 9g fiber, 120mg sodium |
