Roasted Green Beans with Baby Onions


Roasted Green Beans with Baby Onions Serves 8 Roasting imparts rich flavor to this traditional Thanksgiving dish of green beans and baby onions. A splash of balsamic vinegar adds a contemporary accent.

Prep Time: 10 minutes
Cooking Time: 20 to 30 minutes


8 ounces baby white onions


2 pounds green beans, cleaned and ends trimmed


3 tablespoons extra-virgin olive oil


10 cloves garlic, peeled


1/2 teaspoon sea salt


2 tablespoons balsamic vinegar


Freshly ground black pepper

1. Bring water to a boil in a medium saucepan. Drop in onions and let cook 2 to 3 minutes until skins loosen. Strain onions in a colander. When cool enough to handle, peel onions with your fingers.

2. Preheat oven to 375°F. In a 9" x 13" baking dish, combine onions, green beans and garlic. Sprinkle with salt. Pour olive oil over all and toss to evenly coat vegetables.

3. Bake vegetables 20 to 30 minutes, stirring occasionally, until crisp-tender. Remove vegetables from oven and drizzle with balsamic vinegar. Season to taste with black pepper.
