Simple Marinated and Roasted Chicken Breasts

Serves 6 / Cook several breasts using this easy method to have on hand to use in salads, pasta or other dishes calling for cooked chicken. It works equally well with chicken thighs, turkey breasts, pork tenderloin and salmon steaks or fillets—just adjust cooking times.

3/4 cup soy sauce, preferably low-sodium
1/4 cup mirin
1 tablespoon Asian chili-garlic sauce
2 teaspoons toasted sesame oil
6 boneless, skinless chicken half breasts (3 whole breasts)

1. Combine the soy, mirin, chili-garlic sauce and sesame oil, and marinate chicken for at least 15 minutes and up to 2 hours. Preheat oven to 450°. Arrange chicken in a single layer in a lightly oiled baking dish and roast for 15 minutes or until meat is just cooked through and still juicy.
