Zesty Tortilla Roll-Ups


Zesty Tortilla Roll-Ups Serves 4 Pureed white beans and fresh spinach make a simple but surprisingly tasty spread.

Prep Time: 10 minutes


1/2 teaspoon horseradish


3 ounces fresh baby spinach


1 tablespoon rice wine vinegar


2 scallions, coarsely chopped


4 whole-grain tortillas

1. Place all ingredients except tortillas in the bowl of a food processor or blender and puree until smooth. Spoon 1/2 cup of the bean mixture into the center of each tortilla and roll up. Serve whole or cut each tortilla into four slices and secure with toothpicks.
