Mushroom & Green Pea Biryani


Mushroom & Green Pea Biryani Serves 6 Biryani is a classic Indian rice dish incorporating a variety of vegetables and sometimes dried fruits and nuts. A great way to use up leftover rice, this quick and easy recipe is flavored with biryani paste, a mixture of canola oil, garlic, coriander, cumin, turmeric and chilies.

Prep Time: 10 minutes
Cooking Time: 30 minutes


1 large onion, diced


1 tablespoon biryani paste


10 large mushrooms, sliced


1 cup frozen green peas


5 cups cooked rice, preferably basmati

1. Heat 2 tablespoons stock in a large skillet over high heat. Add onions and biryani paste; cook 5 minutes, stirring constantly. Add additional stock, 1 tablespoon at a time as needed to prevent sticking. Add mushrooms; cook 2 minutes. Add peas; cook until peas turn bright green. Stir rice into vegetables and heat thoroughly. Serve immediately.
