Vitasoy Apple Cinnamon Waffles Serves 8

Waffles:

1 cup Vitasoy Enriched Vanilla Natural Soy Drink
1 1/2 cups self-rising flour
1/4 teaspoon ground cinnamon
1 large egg, separated
2 tablespoons margarine, melted
Grated peel of 1/2 orange


Topping:

1 pound cooking apples
1/3 cup maple syrup
Pinch ground cinnamon
1 tablespoon margarine, melted
Grated peel of 1/2 orange
Juice of 1 orange

1. To prepare waffles: In a medium size bowl, combine flour and cinnamon. Add egg yolk, margarine, orange peel and beat to make a smooth batter.

2. In small bowl, whisk egg white until still, then fold into batter.

3. Heat and oil an electric waffle iron. Fill with batter, close lid and cook for 2 to 3 minutes until waffles are golden and crisp. Repeat with remaining batter.

4. To prepare topping: peel, core and coarsely chop apples. Combine apples, maple syrup, cinnamon, margarine and orange juice in a large saucepan and cook over low heat until apples are just soft.

Serve delicious apple topping over waffles.
