Savory Buckwheat Burgers Makes 4 Burgers
Whole buckwheat is available roasted to a deep mahogany color or unroasted with a pale greenish-white hue. Roasted buckwheat (also called kasha) has a strong, almost scorched flavor. Warm buckwheat is easy to form into patties. If you use leftover buckwheat, you will need to add 1/4 cup of flour or an egg as a binder before shaping it into patties.

Prep Time: 5 minutes
Cooking Time: 8 minutes

3 1/2 cups cooked buckwheat
1/4 cup cilantro, chopped
1 cup scallion, chopped
1 tablespoon tamari soy sauce
Pinch cayenne
Freshly ground black pepper to taste
1 tablespoon unrefined vegetable oil

1. Combine buckwheat, cilantro, scallions, tamari, cayenne and black pepper. With damp hands, tightly pack mixture together and form 4 disk-shaped patties.

2. Heat a skillet, add oil, and pan-fry patties for 5 minutes or until browned on one side. Flip patties with a wide spatula and cook the other side for 3 minutes or until browned. Serve hot.
