Roasted Diced Rutabagas


Roasted Diced Rutabagas Serves 4
Packed with vitamin C and beta-carotene, rutabagas have a pungent flavor that mellows with roasting.

Prep Time: 10 minutes
Cooking Time: 40 minutes to 1 hour

4 rutabagas
4 tablespoons vegetable oil
2 teaspoons paprika
Salt and pepper

1. Peel and dice the rutabagas. Heat oven to 375°F. In a bowl, toss rutabagas with oil, and season liberally with salt and pepper.

2. Empty onto a cookie sheet or large baking pan, sprinkle with paprika and bake about 40 minutes, or until browned and slightly crisp on the outside. Turn the rutabagas about every 8 minutes with a spatula or by shaking the pan.
