Lemon Ginger Toddy


Juice from 4 lemons
1 6-inch piece fresh ginger, peeled and sliced
6 tablespoons honey, or to taste
6 cups boiling water Dark rum (optional)

1. In a heatproof pitcher or pan, combine lemon juice, ginger, honey, and boiling water. Steep for 6 minutes. Add rum, if desired, to taste.
