Mango-Pineapple-Coconut Smoothie


Prep time: 5 minutes

Serves 2 / Antioxidant-rich mango and anti-inflammatory pineapple team up with coconut milk to create a taste of the tropics in this sunny smoothie. Prep tip: Adjust the whey protein powder to your needs, and use unsweetened or vanilla powder to vary sweetness.

1/2 cup coconut milk

1 cup rice milk

1/2 cup pineapple or pineapple-orange juice

1 cup frozen and slightly thawed mango chunks

2-3 tablespoons whey protein powder

2 tablespoons coconut flakes, for garnish

Whole mint leaves, for garnish

1. Combine coconut milk, rice milk, pineapple juice, and mango chunks in a blender and purée until smooth. Add whey protein powder and purée again until very smooth. Pour into glasses. Garnish with coconut flakes and mint, if desired. Serve immediately.
