Creamy Avocado Smoothie


Prep time: 5 minutes

Serves 2 / This creamy, pale green smoothie is rich in healthy monounsaturated fats and zinc. Prep tip: Add a scoop of green foods powder (look for single-serving packets in the supplements aisle) for even more nutrients.

1/2 ripe avocado, pitted and peeled

1/2 cup silken tofu

1 1/2 cups vanilla or plain rice milk

2 tablespoons pumpkin seeds, plus extra for garnish

1 teaspoon vanilla extract

Agave nectar, to taste

1 tablespoon green foods powder (optional)

1. Combine avocado, tofu, rice milk, pumpkin seeds, and vanilla in a blender and purée until very smooth. Add agave to taste, plus green foods powder if desired, and purée again to mix. Pour into glasses and sprinkle with additional pumpkin seeds. Serve immediately.
