Cherry Tomato Marinara with Zucchini Noodles


Cherry Tomato Marinara with Zucchini Noodles Serves 6 / This delicious, easy marinara sauce takes less than a minute to make; use it as you would any marinara. Prep tip: If possible, use a spiral slicer to make your own zucchini pasta.

2 pints cherry tomatoes

2 teaspoons dried oregano

1 teaspoon dried rosemary

2 tablespoons lemon juice

2/3 cup olive oil

1 teaspoon salt

2 zucchini, cut into very thin strips (if possible, use a spiral slicer)

1. Place all ingredients except zucchini in blender. Blend until smooth. (Makes 3 cups.) Place zucchini noodles in a serving bowl; pour marinara over and toss gently.

PER SERVING: 243 cal, 86% fat cal, 24g fat, 3g sat fat, 0mg chol, 2g protein, 7g carb, 2g fiber, 400mg sodium
