Crisp Chèvre Sandwiches


Serves 8 / Offer as an appetizer to complement the refreshing Rhubarb lemonade spritzer. Ingredient tip: Thin-skinned English cucumbers tend to have a less bitter skin than regular cukes; you'll find them wrapped in plastic in the produce section. If they're unavailable, you may substitute three small, very fresh zucchini.

Zest of 1 medium lemon (about 2 teaspoons)
Small bunch of chives or delicate garlic scapes, finely chopped
8 ounces fresh goat cheese
Freshly ground black pepper
2 medium English cucumbers

  1. Mix zest and herbs into goat cheese; add a twist of ground pepper. Let mixture rest for 30 minutes, covered, to allow cheese to absorb flavors.
  2. Slice cucumbers into 1/8-inch-thick disks. Spread a one-bite portion of goat cheese between two slices, making a sandwich that can be munched in a mouthful.
